First season the mince beef with the RubnSmoke Spice rub.
800g of minced beef 20% fat.
Place the streaky bacon on the rolling mat and then cover with mince beef.
Layer on the slices at one end and proceed to roll, pulling the mat out when the meat is rolled.
Placed pre-soaked toothpicks through to hold the meat in place
The meat can be placed in fridge or else straight on the grill, using the indirect cooking method.
After 25 minutes of cooking, baste the meat with BBQ sauce
After a further 10 minutes baste again
After another 5 minutes baste again & remove from the grill.
Smash up the Tortilla chips or dried Fried Onions.
Roll the meat over the broken tortilla chips or dried fried onions and then cut into 1 1/2 inch thick slices.
We used whiskey wood chips to give that extra flavour
